Scrambled oats may sound like a strange concept, but trust us, it’s worth trying! Especially if your regular bowl of oats is getting a little boring.
In a bowl, combine the oats, egg (or vegan egg substitute), banana, cinnamon, and ourRaw Probiotics Biotic Ferment until you reach a thick batter consistency. Once your mixture is combined, spoon it into an oiled pan and press flat. Cook it for about 2-3 minutes before using your spatula to gently scramble it like you would eggs! Keep cooking until golden bowl, then serve it in a bowl with your choice of yoghurt, berry compote (or fresh berries), and a drizzle of honey or maple syrup. First, prepare the berry compote by adding the berries to a saucepan and heating over medium-high heat for 3-4 minutes.
Bring the mixture to a boil, then reduce the heat for 2-3 more minutes. Occasionally press the berries, so they release more of their juices (without mashing them fully).
Add the maple syrup towards the end of the cooking time and stir well. Feel free to adjust the amount of lemon juice/sweetener at any time.
Remove from the heat and set aside to cool.
Next, combine all oats ingredients in a small mixing bowl and mix well.
Place coconut oil in a non-stick pan and allow to melt.
Spoon oat mixture into the pan and press flat. Cook for 2-3 minutes before using a spatula to gently scramble until golden.
Serve with your choice of yoghurt and the berry compote. Add honey or maple syrup to taste.
