Jackfruit Curry Noodles

We've used a tasty combination of coconut milk, vegetable stock and herbs and spices including garlic, chilli, ginger, turmeric, coriander and fennel to create a healthy and wholesome curry sauce so all you have to do is sizzle and serve! It's an awesome source of fibre, vitamin C and potassium.
As for your noodles – you can use any asian noodle you like! In this recipe, we've use thick banh canh rice noodles. Once you've cooked your jackfruit and noodles, combine them in a bowl and season with spring onion, hemp seeds, salt, pepper and chilli flakes (if you like it hot!)
